Brinjal simmered in dark soya sauce
This dish is the simplest, yet shiok. You can eat them with plain porridge & hey bee hiam(sambal dried prawn - will share that 1 day)..hmm…plain heaven.
From my experience, the long purple ones are better.
Fry some garlics. When start to brown add in lots of groundpepper….
Add in the brinjal with 1 bowl of water. Pour about 3 tablespoon of dark sauce…
Cover & leave to simmer…..till the brinjal all soft & tender. Thats it! Simple right!
From suz kitchen….signing off!

hey earl-ku! thanks for dropping by. Yeap! we can always do that. meat is good too! Just that brinjal has the tendency to absorb whole load of oil
