Lodeh, Laksa or Lemak ?
i dont know. call it whatever you want. coz i cannot make up my mind what i want to call it. this dish is not laksa gravy coz i dont use laksa leaves. neither would i call it lontong gravy (lodeh) coz it should not have any fishball etc inside & dont have cabbage in it. & lemak shouldnt be yellow colour or izzit? its not curry coz i dont use curry powder. aiyah dunno la. what i know i like it, my family loves it & i think its versatile. can eat it with plain rice, or lontong (rice cake) or laksa noodle (then you must put in laksa leaves la…) /yellow mee or best eat it on its own. SLURP !!
these r the dry ingredients. wht’s not in the pix (i 4got to include in) are roasted fennel & cumin seeds-1 tspn each. grind the dry prawn & put aside. pound/blend the dry chillies with the garlics & 1 of the onions & the roasted seeds to make into chilli paste. you may add more dry chilli, lessen or omit them totally, as u wish
the rest of the ingredients you see are the vegetables & those yong tau foo stuff. you may add prawns for that sweetness, you may like to put some quail eggs, you may prefer long beans to french beans. you may like to put in bamboo shoots. sometimes i put in chinese lettuce. whatever you want to put in there is up to your descretions. main thing is the gravy
slice the fresh chillies & the other onion & saute in some oil. once limp, add in the dried prawns till it turned brown. add in the chillie paste. add in a little bit more oil coz it’ll get dryer. stir them till its quite fragrant.
Add in 1 tspn tumeric powder. (i also put in 1 tspn of grinded roasted fennel/cumin seed coz i 4got to add in earlier while pounding/grinding the chilli paste). fry for a minute then add in the milk - 1/3 can. leave it for a min or 2 while stirring till the oil surfaces.
add in 3 -4 bowls of water & leave it to boil. then add in the lemon grass & galagal (bruised). add in 4 -5 bay leaves.
put in the carrot & turnip. cover & simmer for a while. once soften, put in the beans. simmer again. fire - not to big otherwise will dry up. when the beans are cooked add in the rest - fishball & stuff.
pour out the balance of the milk. 2-3 dashes of fish sauce & add in the ikan bilis cube & salt to taste. that’s it!
there you have it! i’ll eat this with rice & sambal belachan mmm…mmm…out of this world! hmmm….shall i call it the LLL dish?
