Claypot Fish Head
we eat alot of fishhead, i tell u this. i cooked curry with it, asam pedas, lemak chili padi ( my favourite!), steam it (but make sure its fresh) or this particular recipe where you can have all kinds of vege in it & your kids will love it. you can use any type of fishhead. ‘angoli’ (red snapper), garoupa etc. this time i used batang (mackeral) fishhead (cut in half). after i’ve i cleaned them, i marinade it with some light sauce & pepper & i sprinkled it with ground ginger. you may also squeeze ginger juice out of the grated one. this is to get rid of the fishy smell. leave it for about 2 hrs. then i’ll coat them with cornflour & fry. i’ll look like the pix below. now the rest of the ingredients…..you may click on the picture for larger image…
for the veg, leave it to your preference. you can have sweet pea, bell peppers, bittergourd, different types of mushrooms, french beans, brussels sprouts, anything goes. but must be non leafy la
- slice the garlic, onion & ginger (lengthy) saute in some oil. till they’re abit brown & limp.
- add 1 tablespn of oyster sauce & lots of ground pepper.
- add in a cup of water, simmer alittle then put n the carrot 1st.
- after about 1-2 mins, add in the baby corn & the leek. cover & simmer under a slow fire.
- once the veg are half cooked,(need to maintian the crunchiness). mix 1/2 tablespn conrnflour in 2 tablespn of water & add in.
- put in mushroom last.
- put in your fishhead in the preheated claypot & pour in the veg over it. cover & leave to simmer in pot for like 10 mins or when you already hear some sizzling sound. bear in mind pot must be in a very slow fire. otherwise below all ‘chow tar’ !(burnt).
- claypot fish head already done!
P.S. i started to preheat the claypot when i begin to fry the fish head. i did it over the stove under a VERY LOW fire. if you dont have a claypot ,its ok
after step 6 you can just put in the fish head in the pan together with the veg & cover, leave it to simmer.
you can have just soup to accompany this dish coz you already have the fish & vegetable in in one. Oh, if you so scared of fish head, you can always use fish slices. theres no hard & fast rule when it comes to cooking
