Fried Spaghetti

i have this packet of spaghetti which has been sitting in my cabinet for quite a while. i din want to cook the traditional pasta. i’m thinking of something different & which does not take too much of cooking time.  so i came out with this fried spaghetti oriental style.

  1. prepare the spaghetti 10 mins longer than the manufacturer’s required time. remember to add some salt & abit of butter in the boiling water.  i used french beans (sliced diagonally), dried shitake mushroom(soaked in hot water & sliced), red pepper (sliced). you may like to use green pepper to replace the french beans ) . i cup of chix broth/stock, 2 eggs, 3-4 garlics, 1 big onion.
  2. saute the chopped garlic in oil. when browning add in the sliced onions. fry till the onions soft but do not burn the garlic.
  3. add in the french beans. stir till half cooked.
  4. push aside the beans & break 2 eggs. scrambled them & mix with the beans.
  5. mix in the mushroom, red pepper&  stir evenly.
  6. add in the sliced fish ball. i prefered fresh fishballs or fishcake to the pre-fried one. the smell of used oil is kind of strong & it’ll spoil the taste of your cooking too.
  7. add in the spaghetti along with the cup of the chix stock/broth. stir till all the ingredients are well mixed & the chix stock dry up absorbed in the noodle.
  8. add salt to taste & sprinkle some crushed black pepper.

swift! & as easy as ABC! suitable for children’s party. i think its healthier than yellow noodles. my kids love them  lol

from suz kitchen….signing off!
