Milky Fish Soup
my son was asking for fish soup yesterday. so i made this for dinner. i dont have any fish left in the fridge & i’m so lazy to go to the market so i thot i’ll use this dory fish that i still have in my freezer which i normally make fish & chips. of coz all the better if you can use other kind of fresh fish fillet coz they dont have that strong fishy taste like dory or worst, sutchii! i’ve tried using fish head too & it’s fantastically yummy!
i have 2 pc of dory fish fillet here. cut to your desired size. marinade with some salt, pepper & ground ginger. add in 1 tbspn plain flour with 1/2 tbspn cornflour & 1/2 an egg white. leave them for abt an hr & deep fry them. i have some other ingredients which i’d like to add in - tomatoes, button mushroom, silken tofu & dry seaweed.
i have 1/2 medium size red onion, 4 cloves of garlic, a thumb size of ginger, all sliced and sauteed in some oil. when browning add in 1 cube of fish stock, 100 ml of evap milk( i found that F&N is great coz it doesnt have strong ‘evap milk’ smell) & 1 litre of water. leave to boil…
once its boiling add in the other ingredients - fried fish, tomatoes, mushroom, tofu & allow to simmer a few minutes & then off the fire. lastly add in seaweed & leave the pot covered. as we may all know we can have the soup on its own or eat with rice or vermicelli with the accompany of cut red chillies with light sauce. sprinkle with some spring & fried onions when serve. happy trying!

i can’t find evaporated milk here in Ningbo, China!! can use milk ah?

tracy, dont joke!!! how can that be. wah, i really mati if there’s not evep milk. how to have kopi-c!(coffee+evap milk+sugar) fresh milk can oso la. but don’t think it will be nice. & the colour too. hmm…you try la & see how it turn out. good luck!
